Snow Daze + Southwest White Chicken Chili Recipe

Sunday was one of those winter days I dream about – the kind of day where the snow is falling when you wake up and it doesn’t stop until after you go to bed. The days that are full of the sound and smell of a real fire from 10 am to 10 pm, the only outfit you need to have on is whatever is most comfortable, make-up isn’t even a consideration, blankets are used in multitude, the coffee table scenery changes from coffee and breakfast bar wrappers to beer and jalapeno chips, and the only real thing you are expected to do is absolutely nothing at all. This is exactly what our Sunday looked like.
I think we ended up with somewhere around 15 inches of snow which is by far the most we have seen all season. Because we knew we weren’t going to be leaving the house, we made the most of cozying up and hunkering down. We bought this house because of the Summer months but it has been so fun enjoying it during the Winter as well. Remind me of this when it’s 80 and sunny and I am laying on the back of a boat as I curse the thought of the cold and snow returning because believe me, I will need the reminders. But for now, I am enjoying the peace and quiet that the cold brings and every ounce of lazy that we are allowed to be. 
Here are a few snapshots of our snow day with a little commentary along the way. Fully appreciate the fuzzy animal print socks that my leggings are so cutely tucked into. I went for full on sexy in every way possible.

just started a new Beth Moore bible study – can we just all agree that the names and places in the Bible are absolutely impossible to pronounce. It’s like Jesus expected us to be smart. 
and this would be the reason why I feed her as many treats as she wants…that face, I can’t even.
I considered swimming. And then remembered I want to live.

this mug though – found recently at Target, I refuse to drink out of anything but this baby now
I did not color my dog a nice shade of brown – this would be my parents dog who was paying us a visit for a solid two weeks while they were gone. 
And of course – no snow day is complete without food. I made white chicken chili in the crock pot which was the perfect meal to cozy up to on the couch. This recipe is most likely different from the other white chicken chili concoctions you have seen out there — give this one a try sometime, it’s delicious. 
Ingredients: 
1 pound chicken, cooked and shredded
48 oz northern beans, drained
24 oz salsa
16 oz sour cream
3 1/2 cups chicken broth
4 oz diced green chiles 
Toppings:
Fritos
Shredded Cheese
What to do:
Throw everything in a crock pot and cook on low for 6-8 hours. Serve up hot and top with cheese and fritos. Enjoy!
